Tender Beef Tips With Onions and Peppers

These beef tips and gravy are made in the pressure cooker. Tender bits of beef, smothered in a rich mushroom and pepper gravy.

Growing up, beef tips and gravy were one of my favorite meals that my mom would cook. There's something so comforting about that gravy cascading down a pile of rice, or mashed potatoes. This variation of beef tips and gravy uses brown gravy. Whereas, my mom made her gravy from scratch, using a flour base that soaked up all of the goodness from searing the beef tips. Of course for the sake of saving time here at Razzle Dazzle Life, pre-packaged brown gravy mix was used.
These beef tips and gravy were made using a pressure cooker. The pressure cooker has been my life-saver now that we're getting back into the swing of things with school starting. Furthermore, it is so easy to be pressed for time when I'm acting as a taxi cab for the kiddos and all of their activities!
The pressure cooker is AMAZING to get dinner on the table in as little as an hour. Even more, the meat or whatever you decide to put in there, comes out so tender and flavorful!
What if I do not own a pressure cooker?
No worries at all! If you do not own a pressure cooker (I highly recommend you get one), but you can simply use a stock pot that is oven safe, or a cast iron skillet. Follow all of the steps in the recipe, but instead do it over the stove. When you get to the part about putting the lid on the pressure cooker and setting it to "meat," you would simply add the lid or foil over your pot and place it in the oven on 375 degrees for one hour.
What should I serve with the beef tips?
We served these beef tips and gravy over rice. Another great side dish is mashed potatoes. Either one is delicious because they soak up the gravy to provide a complete and hearty meal. No meal is truly complete without a side of vegetables though! This squash and tomato bake recipe would pair perfectly with this meal.
Someday we will take an adventure to making homemade gravy- which is even better with this recipe! Needless to say, the peppers, onions, and mushrooms add so much extra flavor to the instant gravy. You will not be able to tell it's not homemade. Most importantly though, DO NOT omit the nutmeg! It is not a spice that is used in savory dishes all too often, but it adds a really special layer of flavor to these beef tips and gravy.
Ingredients
- 1 pound Beef stew meat, trimmed and rinsed
- 2 packs Brown gravy mix
- 1 Red bell pepper, thinly sliced
- 1 cup Mushrooms, sliced
- 1 small Onion, thinly sliced
- 2 tablespoons Olive oil
- 4 cups Water
Seasoning (to taste)
- 2 tablespoon Seasoning salt
- 1 tablespoon Black pepper
- ½ tablespoon Garlic powder
- ½ tablespoon Onion powder
- 1 teaspoon Nutmeg
Instructions
- Set your pressure cooker to the "saute" mode. In a separate bowl, season the meat to coat evenly.
- Add olive oil to the pressure cooker and warm for about one minute. Add the meat and saute for about 5 minutes to brown it.
- Add the bell pepper, onions, and mushrooms. Saute an additional 5 minutes.
- Mix the gravy and the water in a separate bowl. Pour gravy mixture over the meat and peppers.
- Close the pressure cooker and set it to the "meat" mode. This usually cooks for one hour.
- Release pressure once it's complete. Serve over rice or mashed potatoes for a complete meal.
Notes
If you do not own a pressure cooker, follow the recipe using a large pot or cast iron skillet instead. Cover with lid or foil and place in the oven at 375 degrees for one hour.
